A new kind of Indian restaurant. Food which harks back
to the purity and simplicity of food that used to be eaten in the villages
of Kerala. The land where the Spice Trade originated. Kerala has mastered
the subtle use of spices, testimony to the centuries of constant innovation
in the use of spices. Cooking with fresh ingredients which was grown in
each homestead's own backyard.
Fresh green vegetables of great variety, cooked lightly and tempered with
a magical light touch of spice. Fresh sea food from The Arabian Sea and
from the inland waterways, rivers and lakes that criss-cross the land. In
a land of tropical climes, with little or no refrigeration, the meat that
was used always had to be totally fresh.
